QUINOA, PEAR, AND SPINACH IN A JAR

Thanks to nutrition Expert Alexis Joseph, we have a delightfully simple and fresh salad that we can easily pack for lunch: Quinoa, pear, and spinach salad in jar.

Ingredients

  • 2 tbsp maple balsamic vinegar
  • 1/2 cup cooked quinoa
  • 1/2 large ripe pear, diced
  • 2 tbsp pecans, chopped
  • 2 tbsp chopped red onion
  • 2 tbsp dried cherries
  • 2-3 cups baby spinach
  • 1 quart size (32oz) mason jar

Layer the salad opposite as you would in an actual bowl,

 

and voila!

 

Oh the mason jar. A salad’s best traveling companion for those workday lunches. Simple and tasty go a long way! Just pour it into a bowl when you’re good and ready!
