Tacos are the perfect, handheld vehicle to deliver delicious flavors to your mouth. Let our Texas gal-at-heart and nutrition Expert Haley Goodrich share a few of her favorite healthy taco ideas that can quickly turn any meal into a Tex-Mex party!

LENTIL TACOS

Lentils are a great alternative to meat in tacos for a plant-based diet or if you are simply wanting to explore other healthy protein options. They are economical to buy, easy to cook and can be used in so many dishes. These delicious lentils mimic ground beef and are an equally satisfying way to spice up your next meatless Monday!

Ingredients

  • 1 1/2 cups lentils, cooked
  • Corn or flour tortillas
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1-2 Tbsp olive oil

Seasoning mixture

  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 Tbsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes
  • Salt and pepper

Toppings

  • avocado slices
  • feta cheese
  • cilantro
  • radishes
  • salsa
  • lime

BREAKFAST TACO BAR

A breakfast taco bar is a fairly effortless way to present a healthy and creative brunch to your friends or family. By using a mix of tortillas, proteins, and toppings, everyone has options. Set all ingredients out in small bowls and include lime wedges and fresh cilantro to brighten up the flavors!

BLACK BEAN AND CORN TACOS

These wallet-friendly tacos are the perfect quick and nutritionally balanced work lunch. Pack the corn tortillas in foil, limes in a bag and all the remaining ingredients in a microwavable tupperware or glass bowl. Microwave the ingredients until warm and assemble your tacos. The last step is to squeeze fresh lime over them. Let the lunch fiesta begin!
