AN EGG-CELLENT RECIPE

Thanks to nutrition Expert, Taryn Schubert, we get to begin our new year by sharing her simple yet egg-cellent recipe! And not only that, we get to share some of her egg-ceptional insight around eggs altogether. We’re b-egging (okay last one, we promise) you to give this a look.

EGGY SWEET POTATO HASH

SERVINGS: 2
  • 2 Sweet Potatoes, peeled and cubed
  • 1 cup chopped kale (5 leaves)
  • 2 Eggs
  • Salt & pepper to taste

Eggs are a fantastic source of protein. And one of the few foods that provides us with a naturally occurring source of vitamin D, and also contains vitamin A, zinc, multiple B vitamins, choline, phosphorus, vitamin E, and Cholesterol.

CHOLESTEROL YOU SAY? 

It has gotten such a bad rep over the years, we don’t realize how essential it is to our bodies for processes such as brain development and healthy pregnancies.

And it’s possible to have cholesterol deficiency!

Of course, most of us aren’t at risk of low cholesterol levels.

Many people have the opposite problem. Consuming cholesterol does not play a significant role in actually raising our blood cholesterol levels; rather, it is refined carbohydrates.

Like all science, nutrition is constantly evolving as we conduct new studies and learn more about how eating interacts with our bodies. There is absolutely no reason to be afraid of eggs. But like everything, moderation is key.

(Also, egg whites, like egg substitutes, have no cholesterol but are still a great source of protein).
