PERFECT EGG DISHES TO START YOUR DAY

The perfect eggs go a long way in the mornings, and nutrition Expert Rachel Greenspan shows us how it’s done!  Check out a few of her most egg-ceptionally delightful dishes that you need to start your day with!

This vibrant take on shakshuka is perfect for getting those greens in first thing in the morning! It makes a great weekend brunch served with warm whole wheat pita. Start off the curried spinach on the stove, add eggs, then pop the skillet into a preheated oven for perfectly runny eggs.

INGREDIENTS
  •  4 eggs
  • chopped spinach
  • garlic
  • onion
  • curry spices
  • coconut milk

 

You don’t have to eat meat to enjoy the sweet, savory, spicy, and smoky flavors in the morning. This sweet potato hash topped with a runny poached egg is one of my favorite combinations for a savory breakfast.

INGREDIENTS
  • diced sweet potato
  • sautéed onion and garlic
  • sliced shiitake
  • diced medjool dates
  • smoked paprika
  • runny poached egg
  • red pepper flakes
  • salt + pepper

 

A little prep goes a long way in the morning. Wash, chop, and freeze fresh kale so that you can easily grab a handful to throw into a morning omelet.

INGREDIENTS
  • 2 eggs
  • frozen chopped kale
  • tomatoes
  • red pepper flakes
  • salt + pepper

 

Morning skillets are the easiest way to incorporate veggies in the morning. Throw in fried eggs and whatever veggies you have available!
