Lentils are a rich source of fiber and magnesium, which are helpful to keeping you full, stabilizing blood sugar and keeping your heart healthy! They also contain one of the highest protein levels across legumes and nuts, making them a wonderful source of protein for vegans and vegetarians. We can’t think of a better way to incorporate these little nutrient powerhouses into our mornings!
- 1/2 cup milk or non-dairy milk
- 1/2 cup greek yogurt or kefir
- 1 cup frozen mango
- 1/2 cup frozen lentils (see this tutorial on how to freeze lentils)
- 1 ripe peach (pit removed)
- 1/2 tsp ground ginger
- Pinch of sea salt
