Chinese food is well-known for its complex flavor and simplicity, and stir-fries are one of the best ways to celebrate those qualities. The most wonderful part about stir-fry recipes is that once you have all your ingredients prepped and ready to go, all you need to do is toss them into the pan for a few minutes.

Bam! Dinner is done.

If you’ve been considering going plant-based in more of your weeknight meals for environmental or ethical reasons, try this stir-fry recipe during one of the days. Mushrooms and tofu make for amazing meat substitutes that’s hearty, filling, and nutrient-dense to boot!  Add them to the mix with your favorite ingredients from Chinese cuisine, including five-spice, sesame oil, and mirin (as a substitute for Chinese cooking wine).

Then serve it over a bed of rice with bok choy, and you’ve got yourself a stir-fry dinner that hits the spot in 25 minutes. Consider prepping ahead with chopped veggies, use any unused, leftover veggies from the last meal, or simply pick up a mixed variety bag on your way home from work. Yup, it’s that simple!

Now, on to the recipe.

INGREDIENTS
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp mirin
  • 1 tsbp hoisin
  • 2 tsbp sesame oil, divided
  • 1/4 cup honey
  • 2 tsp five-spice powder
  • 1 tbsp ginger, minced
  • 1 tsp garlic, minced
  • 12 oz cremini or shiitake mushrooms, thinly sliced
  • 14 oz tofu, drained, cut into 1-inch pieces
  • 1 bunch Chinese chives, roughly chopped
  • 8 birdseye chilies (optional)
  • 3/4 lb bok choy, stemmed
  • 1 tbsp peanut oil
  • Steamed rice, to serve
